Fit Noodles!

Another way to eat rice with chicken, which we already know is a staple in fitness food. Healthy carbohydrates and quality proteins. We will also add vegetables to complete the micros and macronutrients, achieving a very complete and healthy dish. Making the purchase in Mercadona, I found (once again) one of its novelties. This time, it’s about some rice noodles.

They come in a package with four nests of dry pasta. According to their labeling, they do not contain gluten, so they are suitable for celiacs, they do not contain preservatives or monosodium glutamate, that flavor enhancer that is talked about so much and that I will tell you about in a specific post about this product soon. The instructions for use also come in the packaging, although I already tell you that it is very, very easy. Boiling water, cook 2-3 minutes, wash with cold water and drain. Let’s go to the recipe!

Ingredients for 2 people.

  • 1 onion
  • Half red pepper
  • Olive oil
  • Salt
  • 1 filleted chicken breast
  • Garlic and parsley
  • 2 noodle nests
  • Fresh cultivated mushrooms (depending on the size, more or less 2 per person).
  • Optional, for a more oriental touch, use soy sauce for seasoning instead of plain salt.

We put a saucepan with water to heat and bring to a boil. Meanwhile, we have a frying pan and if, like me, you have a wok frying pan, much better. We put it to heat with a splash of EVOO. Chop the onion into thin julienne strips, the pepper and the mushrooms. We are throwing it in the pan in that order and poaching.

We cut the chicken into strips, season and add it to the wok along with the poached vegetables.

We will have the boiling water of the saucepan and it is time to add the noodles. From this moment, we will count 2-3 minutes of cooking. You must move the noodles so that they detach from each other.

Sauté everything in the pan well, if you are using the wok, it will allow you to brown and caramelize the onion in a very special way, it will give it a very good flavor.

The 3 minutes are up and it’s time to get the noodles out. Use a strainer / drainer for this and put them under the tap with cold water. Drain them and add them to the wok.

Sauté everything well, you can help yourself with some chopsticks (those that we never use when we ask for Chinese food), you will not scratch the pan and you can separate the noodles well and mix all the ingredients better. Here you have the option of adding soy sauce or, as I have done, adding a mash of garlic, parsley and oil to give a Mediterranean touch to this typical oriental dish.

A long time ago I bought an oriental seasoning which, to be honest, is quite good and has no glutamates or histories of these, only dehydrated spices. Give your personal touch!

You may not have noticed, but you just finished a slice of chicken noodles in about 15 minutes. 😉You have no excuse, it is fast, easy and healthy. And, well, delicious, that’s the main thing, taking care of ourselves while enjoying what we eat.

Variations🙋🏼‍♀️

Those of you who already know me, know that in recipes I give you options so that you can adapt them to your tastes or simply to vary them and not make them repetitive.

In this case, it occurs to me that you can use another type of meat, or if you dared with textured soy, make this a vegan dish by replacing it with chicken. Also, you can add some shrimp or squid. 🍗🥩🦐🦑

You can also add a beaten egg and sauté it before taking it out of the wok.🥚🍳

As for the vegetables, total freedom. Zucchini, eggplant, green pepper … whatever you like and without limit! 🍆🥕🌶🥒

Ah! I forgot. This dish, for two people, will not cost more than € 3 or € 4. Another positive point 💁🏻‍♀️
